  • Start by slicing your chicken breasts into strips. You should be able to get around 18 strips, which will give 3 strips per meal.
  • Place your chicken strips in a large mixing bowl and add in 1/2 Tbsp olive oil, 1/2 Tbsp garlic powder, 1 tsp onion powder, 1/2 tsp Italian seasoning, 1/4 tsp smoked paprika, and a little salt to preference. Mix to coat.
  • In a large skillet, heat 1/2 Tbsp olive oil over medium-high heat. Once your oil is hot, add in your chicken strips. Cook for 3-4 minutes on each side or until chicken is browned on the outside and cooked through in the middle. When done, remove from the skillet and set aside.
  • Reduce the heat to medium and in that same skillet, add in your sliced bell peppers and about 2 Tbsp of water to deg laze the pan and help the peppers sweat. Cook for 2-3 minutes and then add in your sliced onions.
  • While your peppers and onions are working, cook your pasta according to the instructions on the package. When done, strain, return to the pot, and set aside.
  • Once your peppers and onions reach your desired tenderness, remove them from the skillet and set aside.
  • In that same skillet, melt 1 Tbsp of butter over medium heat and add in your chopped garlic. Cook for about 30 seconds or until fragrant, then add in 1 cup of chicken broth, and 1/4 cup heavy cream, and mix together. Once your sauce starts bubbling, add in your grated parmesan, and mix to incorporate.
  • Add your sauce, peppers, onions, and chicken into the pot with your cooked pasta. Mix everything together, taste, and add salt and pepper to preference.
  • Portion out into your meal containers and enjoy!

Notes

• If you watch the video, you’ll notice that I added everything into my skillet at the end. Please do not attempt this if you do not have a large skillet. Instead, add everything into the pot that you cooked your pasta in.
• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
