  • Start by chopping your chicken, bell pepper, and your onion. If you are using a scotch pepper, dice it into tiny pieces. Set everything aside.
  • In your crockpot pour in your bottle of Polynesian sauce, then add in your chopped chicken, chopped onion, chopped bell pepper, diced scotch pepper (if using), and 1 Tbsp of garlic powder. Mix well.
  • Cover and cook on low for 4 hours, or high for 2 hours, or until chicken reaches an internal temperature of 165°F.
  • When your chicken is done, stir to mix. The liquid will be runny so to fix this, in a small bowl, add 1 cup of water and 2 Tbsp of cornstarch. Mix well to create a slurry. The slurry should be cloudy and free of clumps. Add this into your crockpot and mix into the sauce. Let this cook for 10-15 minutes, uncovered.
  • While that is working, cook your rice in a rice cooker or pot according to the instructions on the package. When done, portion out evenly into your meal containers.
  • Once your sauce thickens in the crockpot, stir, taste, and add any salt you may need.
  • Portion your chicken and sauce out in your meal containers over your rice.
  • Enjoy!

Notes

• If you want your sauce thicker, you can use more of the slurry.
• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
