Instructions

  • Bring a medium pot of water to a boil over high heat.
  • Dice your asparagus into bite size pieces. Be sure to trim the lighter pieces off, they are harder and more fibrous. Place them into the pot of boiling water and cook for 2-3 minutes or until desired doneness. When done, strain and rinse with cold water, and set aside.
  • Dice chicken into bite size pieces, add to a large mixing bowl. Add 1 Tbsp olive oil and 1 Tbsp of Cajun seasoning. Mix well to coat.
  • Heat a large skillet on medium/high heat. Add in your seasoned chicken and your chopped onion. Cook for 5-7 minutes or until the internal temperature reaches at least 165°f, turning regularly. When done, remove from heat and set aside.
  • Bring a large pot of water to boil over high heat and cook your pasta according to the instructions on the package.
  • While the pasta is cooking, start on your sauce. In a large mixing bowl, add your Greek yogurt, 2 Tbsp olive oil, 1 Tbsp Cajun seasoning, paprika, and milk. Mix well.
  • When your pasta is done, remove from heat, strain, and return to pot. Add your sauce, parmesan cheese, cooked chicken, chopped asparagus, and can of diced tomatoes to the pasta. Mix well. Add salt and pepper to taste.
  • Divide evenly among six meal containers and you're done!
  • Enjoy!

Notes

• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
• The Cajun seasoning can be adjusted according to your preference.
