  • Start by chopping your chicken and placing it into a large mixing bowl.
  • Add in your corn starch, garlic powder, onion powder, oregano, paprika, cayenne, ground mustard, and 1 Tbsp of olive oil. Season with salt and pepper to your preference.
  • Heat a large skillet over medium-high heat and add in your chicken. Cook for 5-7 minutes, or until chicken reaches an internal temperature of 165°F.
  • Once your chicken is done, remove from heat and set aside.
  • Heat 1 Tbsp of olive oil over medium-high heat, then add in your chopped garlic and your chopped spinach.
  • Cook for 3-4 minutes or until the spinach is cooked down and the garlic is fragrant. Then add in your lemon juice and salt to taste.
  • Add your uncooked orzo to your spinach, along with 2-3 C of chicken broth. It should be enough to completely cover the orzo.
  • Cover and cook, stirring occasionally. Orzo is done when the liquid is evaporated and the orzo is not hard.
  • When the orzo is done, stir in your feta, then remove from heat.
  • Divide orzo and chicken evenly among six meal containers.
  • Enjoy!

Notes

• You can reserve a little of the feta to add as a garnish to each meal.
• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
