  • Start by heating a pan over medium-high heat
  • Add your turkey sausage to the pan. Cook to brown, breaking it up as much as possible in the process.
  • While your turkey sausage is cooking, line a 9×13 baking dish with your frozen tater tots. Don't worry if you have some that do not fit,you'll use these to top your casserole.
  • In a large mixing bowl, pour in your liquid egg whites, your chopped spinach, chopped bell pepper, half of the bag of shredded cheese, garlic powder, and some salt and pepper. Mix well.
  • When your sausage is done cooking and reaches a temperature of 165°F, add it to your baking dish on top of your tater tots.
  • Pour your egg mixture over the sausage and spread everything out as evenly as possible. Add any remaining tater tots on top, and spread those out evenly as well.
  • Place the baking dish in the oven at 350°F for 30-45 minutes or until the eggs are cooked and formed completely.
  • After your casserole is done, take it out and sprinkle your remaining shredded cheese on top and back in the oven for another 5-10 minutes, or until the cheese is completely melted.
  • When your casserole is done, cut evenly into 6 squares.

Notes

• This recipe is for 6 servings but these portions are extremely large. If you cut into more servings, adjust your calories and macros accordingly.
• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.
• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
