Brown your beef in the skillet, crumbling up the beef occasionally while cooking.
While the beef is cooking, start boiling your pasta and cook according to the instructions on the package. When done, remove from heat, strain, and set aside.
When your beef is done cooking and reaches a temperature of 160°F, strain the grease, and set the beef aside.
Heat a skillet over medium heat and add your chopped broccoli along with ½ C of water. Cook this until the water evaporates and the broccoli is tender.
Reduce the heat to medium-low and add in your diced tomatoes, green chiles, and salsa con queso. Mix well.
Add in your ranch seasoning packet, mix well, then add in your cooked beef.
Cook everything for 2-3 minutes then remove from heat, and pour into a large mixing bowl or pot. Add in your cooked pasta and mix everything together.
Divide this as evenly as you can among 6 meal containers.
Enjoy!
Notes
• For even distribution of meals among meal containers, you can either estimate the portions, or weigh the entire batch, and divide that number by your number of meal containers. This recipe makes six meals, so it would be the total weight, divided by six. That will be your portion size per meal.• If storing for meal prep, place into freezer safe meal containers, and place in the freezer for freshness. Take the meal out of the freezer and place it in the refrigerator the night before to let the meal thaw out.
